A fabulous seasonal dish, perfect as a side to your festive meal!


1 Large Red Cabbage, shredded

150gm Demerara Sugar

150gm Butter

200gm Raspberry Vinegar

100gm Balsamic

1 orange, Zest and juice

½ lt Cranberry Juice

200gm Dried Cranberries

1 star anise



You will need a pan large enough to fit all the cabbage.

Put pan on heat and melt the butter, stir in the sugar till dissolved, add in the cabbage, vinegars, orange juice & zest, star anise, then simmer until syrup consistency.

Add the cranberry juice and berries, cover with a disk of greaseproof paper and cook until tender. Taste and season.
